Degorgement process: preparation of our upcoming Brut Nature Sparkling Wine

We are excited about our upcoming release, the Monte das Herdades Brut Nature 2021. On the 19th and 20th of June, we completed the degorgement process in our cellar, a crucial step in producing high-quality sparkling wines.

Degorgement is the process of removing sediment that accumulates in the bottle during the second fermentation. This process ensures the clarity and purity of the sparkling wine. Initially, bottles are placed in equipment where they are inverted so that only the neck is subjected to a temperature of -25°C for 7 minutes, enough to freeze the accumulated sediment. Upon removing the temporary cap, the sediment is expelled due to the internal pressure of the bottle.

This step is essential to ensure that our sparkling wine not only looks good but also offers an elegant and balanced flavor experience.
